I baked a Carrot Cake today (page 394). Carrot cake is my favorite birthday cake but it's not my birthday, so even better.It's a very moist and delicious cake without being overly sweet. I decided not to frost it because the cake is perfect without it. I thought if someone wanted frosting, then I'll add a bit of whipped cream. John mentioned he liked it better than the zucchini bread...
